Description

A delicious reinterpretation of the classic tiramisu, combining the creaminess of traditional dessert with the unique flavor of famous Raffaello pralines.


Ingredients

  • 500 g mascarpone
  • 3 fresh eggs (separated)
  • 100 g granulated sugar
  • 200 ml heavy cream
  • 100 g Raffaello pralines (coarsely chopped)
  • 2 cups espresso coffee (cooled)
  • 100 g ladyfinger biscuits
  • Cocoa powder for dusting

Instructions

  1. Prepare the coffee: Brew espresso coffee and let it cool in a large bowl.
  2. Whisk the egg yolks: In a large bowl, mix the egg yolks with sugar until obtaining a light and frothy mixture.
  3. Add the mascarpone: Incorporate the mascarpone into the egg yolk and sugar mixture. Gently mix to avoid lumps until you achieve a smooth cream.
  4. Beat the egg whites: In another bowl, beat the egg whites until stiff peaks form. Ensure the bowl is clean for the best results.
  5. Incorporate the cream: In another bowl, whip the heavy cream until soft peaks form. Fold in the whipped cream into the mascarpone mixture gently with a spatula.
  6. Add the beaten egg whites: Gently fold the beaten egg whites into the mascarpone mixture using an under-and-over motion to avoid deflating the mixture.
  7. Assemble the tiramisu: Begin dipping the ladyfingers into the coffee, ensuring they are soaked but not overly soggy. Layer them in a dish to form an even layer.
  8. Pour cream and pralines: Add a layer of mascarpone cream over the ladyfingers and sprinkle in some chopped pralines.
  9. Repeat the layers: Continue layering with another layer of soaked ladyfingers, mascarpone cream, and remaining pralines until all ingredients are used up. Finish with a layer of cream.
  10. Chill: Cover the tiramisu and refrigerate for at least 240 minutes, preferably overnight, to allow the flavors to meld.
  11. Serve: Before serving, dust the tiramisu with cocoa powder and garnish with extra pralines, if desired.
