Scale
- 4 cups prime rib drippings
- 2 cups beef broth
- 1/4 cup dry red wine (optional)
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt to taste
- Black pepper to taste
Instructions
- Pour the prime rib drippings into a heatproof bowl. Skim off any excess fat.
- Transfer the drippings to a saucepan.
- Add beef broth and red wine (if using) to the saucepan.
- Add thyme sprigs and bay leaf.
- Bring the mixture to a simmer over medium heat.
- Reduce heat to low and let it simmer gently for 15-20 minutes, allowing the flavors to meld.
- Remove thyme sprigs and bay leaf.
- Season with salt and black pepper to taste.
- Strain the Au Jus through a fine-mesh sieve for a smoother consistency, if desired.
- Serve hot.
Notes
- For a richer flavor, use drippings from a well-seasoned prime rib.
- If you don’t have enough drippings, you can supplement with beef broth.
- You can add a splash of Worcestershire sauce for extra depth of flavor.
- Au Jus can be made ahead and reheated.
