Description

A classic Au Jus made from prime rib drippings. This rich sauce is perfect for dipping your prime rib or other roasted meats.


Ingredients

Scale
  • 4 cups prime rib drippings
  • 2 cups beef broth
  • 1/4 cup dry red wine (optional)
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Pour the prime rib drippings into a heatproof bowl. Skim off any excess fat.
  2. Transfer the drippings to a saucepan.
  3. Add beef broth and red wine (if using) to the saucepan.
  4. Add thyme sprigs and bay leaf.
  5. Bring the mixture to a simmer over medium heat.
  6. Reduce heat to low and let it simmer gently for 15-20 minutes, allowing the flavors to meld.
  7. Remove thyme sprigs and bay leaf.
  8. Season with salt and black pepper to taste.
  9. Strain the Au Jus through a fine-mesh sieve for a smoother consistency, if desired.
  10. Serve hot.

Notes

  • For a richer flavor, use drippings from a well-seasoned prime rib.
  • If you don’t have enough drippings, you can supplement with beef broth.
  • You can add a splash of Worcestershire sauce for extra depth of flavor.
  • Au Jus can be made ahead and reheated.
