- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups diced apples
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk milk, oil, egg, and vanilla.
- Pour wet ingredients into dry ingredients. Stir until just combined.
- Fold in diced apples.
- Divide batter evenly into muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Use any apple variety, but Granny Smith or Honeycrisp work well.
- For extra sweetness, sprinkle cinnamon sugar on top before baking.
- Store in an airtight container for up to 3 days.
