A hearty and comforting creamy potato soup loaded with savory ham and melted cheese.
Ingredients

- 2 lbs potatoes, peeled and diced
- 1 lb ham, diced
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups milk
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth.
- Add diced potatoes and bring to a boil. Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Use an immersion blender to partially blend the soup until creamy, leaving some potato chunks. Alternatively, transfer about half the soup to a regular blender and blend until smooth, then return to the pot.
- Stir in diced ham, milk, heavy cream, and shredded cheddar cheese.
- Cook, stirring, until cheese is melted and soup is heated through. Do not boil.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a richer soup, use half-and-half instead of milk.
- Garnish with fresh chives or parsley.
- Add a pinch of nutmeg for an extra layer of flavor.
