- 2 pounds boneless, skinless chicken breasts
- 1 packet (1 ounce) taco seasoning
- 1/2 cup chicken broth
- 1/4 cup salsa
- 1/4 cup chopped onion (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Pat the chicken breasts dry with paper towels. Season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side until lightly browned.
- Place the seared chicken in your crockpot.
- In a small bowl, mix together taco seasoning, chicken broth, salsa, and chopped onion (if using).
- Pour the seasoning mixture over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Remove the chicken from the crockpot and shred it using two forks.
- Return the shredded chicken to the crockpot and stir to coat with the liquid.
- Serve warm.
Notes
- For extra flavor, add a pinch of chili powder or cumin to the seasoning mix.
- You can substitute chicken thighs for chicken breasts. Adjust cooking time as needed.
- If you don’t have taco seasoning, you can mix your own using chili powder, cumin, paprika, garlic powder, and onion powder.
