- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Shredded cheddar cheese for topping (optional)
Instructions
- Brown the ground beef in a large pot or Dutch oven over medium heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the diced tomatoes, kidney beans, diced tomatoes and green chilies, chili powder, and cumin. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for at least 20 minutes, or until flavors have melded. Stir occasionally.
- Serve hot, topped with shredded cheddar cheese if desired.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute ground turkey or chicken for ground beef.
- Serve with cornbread or crackers.
