- 1/2 cup mayonnaise
- 1/2 cup Cotija cheese (crumbled)

- 2 tbsp lime juice
- 1/2 tsp garlic powder

Instructions
- Prepare the corn by husking and cooking fresh corn cobs or thawing and sautéing frozen corn.
- Mix the mayonnaise, lime juice, chili powder, and garlic powder in a bowl.
- Combine the cooked corn with the sauce and gently fold in the Cotija cheese.
- Assemble the corn mixture into bite-sized balls or use a mini muffin tin.
- Bake at 375°F (190°C) for 15–20 minutes until golden.
- Garnish with lime juice and extra Cotija cheese, serve warm.
Notes
Customize with jalapeños or red onion for added flavor. Serve with a dipping sauce for an extra dimension.
