Description

Delicious and easy bite-sized snacks featuring the classic flavors of elote, perfect for gatherings and parties.


Ingredients

Scale
  • 2 cups corn kernels (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/2 cup Cotija cheese (crumbled)
  • 1 tsp chili powder
  • 2 tbsp lime juice
  • 1/2 tsp garlic powder
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Prepare the corn by husking and cooking fresh corn cobs or thawing and sautéing frozen corn.
  2. Mix the mayonnaise, lime juice, chili powder, and garlic powder in a bowl.
  3. Combine the cooked corn with the sauce and gently fold in the Cotija cheese.
  4. Assemble the corn mixture into bite-sized balls or use a mini muffin tin.
  5. Bake at 375°F (190°C) for 15–20 minutes until golden.
  6. Garnish with lime juice and extra Cotija cheese, serve warm.

Notes

Customize with jalapeños or red onion for added flavor. Serve with a dipping sauce for an extra dimension.
