- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can pumpkin puree
- 1 (10.5 oz) can cream of mushroom soup
- 1/2 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp nutmeg
- 1 cup shredded cheddar cheese
- 1/2 cup crushed crackers
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain off any excess fat.
- Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Stir in pumpkin puree, cream of mushroom soup, milk, salt, pepper, and nutmeg.
- Bring the mixture to a simmer, stirring constantly.
- Pour the mixture into a greased 9×13 inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Top with crushed crackers.
- Bake for 25-30 minutes, or until heated through and bubbly.

- For a vegetarian option, omit the ground beef and add sautéed mushrooms and extra vegetables like zucchini or bell peppers.
