Description

A hearty and flavorful slow cooker meal perfect for autumn.


Ingredients

Scale
  • 2 lbs beef chuck roast
  • 1 lb sweet potatoes, peeled and cubed
  • 1 lb carrots, peeled and chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/2 cup red wine
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Place beef chuck roast in the slow cooker.
  2. Add sweet potatoes, carrots, onion, and garlic around the roast.
  3. In a bowl, whisk together beef broth, red wine, Worcestershire sauce, soy sauce, thyme, and rosemary.
  4. Pour the liquid mixture over the ingredients in the slow cooker.
  5. Season with salt and pepper.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours, until beef is tender.
  7. Shred or slice beef before serving.

Notes

  • For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
  • Serve with mashed potatoes or crusty bread.
