Ingredients

- 2 lbs beef chuck roast
- 1 lb sweet potatoes, peeled and cubed
- 1 lb carrots, peeled and chopped
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup beef broth
- 1/2 cup red wine
- 2 tablespoons Worcestershire sauce
- 1 tablespoon soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place beef chuck roast in the slow cooker.
- Add sweet potatoes, carrots, onion, and garlic around the roast.
- In a bowl, whisk together beef broth, red wine, Worcestershire sauce, soy sauce, thyme, and rosemary.
- Pour the liquid mixture over the ingredients in the slow cooker.
- Season with salt and pepper.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until beef is tender.
- Shred or slice beef before serving.
Notes
- For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the slow cooker during the last 30 minutes of cooking.
- Serve with mashed potatoes or crusty bread.
