Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup chopped pecans (optional)
  • For the Glaze: 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, cream together sugar and softened butter until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract and pumpkin puree.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in chopped pecans if using.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
  11. Once the cake is completely cool, drizzle the glaze over the top.

Notes

  • For a richer flavor, use brown sugar instead of granulated sugar.
  • Add a handful of dried cranberries for a tart contrast.
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
