- 1 pound pasta
- 1 tablespoon olive oil
- 1 pound ground Italian sausage
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 cup chopped butternut squash
- 1 cup chopped zucchini
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add sausage and cook until browned. Drain excess fat.
- Add onion to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in butternut squash and zucchini. Cook until slightly tender, about 8-10 minutes.
- Pour in crushed tomatoes. Stir in oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, or until vegetables are tender.
- Add cooked pasta to the skillet with the sauce. Toss to combine.
- Serve hot, topped with Parmesan cheese.

- For a vegetarian option, omit the sausage and add an extra cup of vegetables like mushrooms or bell peppers.
- Adjust seasonings to your preference.
