Ingredients

- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tsp thyme
- 1 tsp rosemary
- 6 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 cup lentils, rinsed
- 2 cups spinach, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute.
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Add lentils. Reduce heat and simmer for 25 minutes.
- Stir in spinach. Cook for 2 minutes.
- Season with salt and pepper. Serve hot.

- For extra protein, add cooked chicken or tofu.
