Description

A delicious and easy-to-make dish featuring chicken marinated in lemon, garlic, and butter, skewered and grilled to perfection.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breasts
  • 4 large cloves garlic, minced
  • ½ cup unsalted butter
  • ¼ cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Skewers (if using wooden skewers, soak in water for 30 minutes before grilling)

Instructions

  1. Prep the chicken: Cut the chicken breasts into bite-sized pieces.
  2. Make the marinade: In a mixing bowl, combine minced garlic, melted butter, lemon juice, lemon zest, olive oil, salt, and pepper. Whisk until well combined.
  3. Marinate the chicken: Place the chicken pieces in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Let it marinate in the fridge for at least 30 minutes or up to 2 hours.
  4. Skewer the chicken: Once marinated, take the chicken pieces out and thread them onto the skewers.
  5. Grill time: Preheat the grill or grill pan over medium-high heat. Cook the skewered chicken for about 15-20 minutes, turning occasionally until golden brown and reaches an internal temperature of 165°F.
  6. Serve and enjoy: Remove the chicken from the skewers and transfer to a serving platter. Garnish with fresh parsley.

Notes
