Description

Easy sheet pan dinner featuring sticky teriyaki turkey meatballs, broccoli, and bell peppers. A quick and delicious meal perfect for any occasion.


Ingredients

  • 1 lb ground turkey
  • 1/4 cup panko bread crumbs
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1/2 cup teriyaki sauce
  • 1 tbsp sesame seeds (optional)
  • 2 green onions, sliced (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine ground turkey, panko bread crumbs, egg, minced garlic, grated ginger, salt, and pepper. Mix gently until just combined.
  3. Roll the mixture into 1-inch meatballs.
  4. Arrange the meatballs on one side of the prepared baking sheet.
  5. Toss the broccoli florets and sliced red bell pepper with olive oil and spread them on the other side of the baking sheet.
  6. Bake for 15 minutes.
  7. Remove the baking sheet from the oven. Pour the teriyaki sauce over the meatballs and vegetables, tossing gently to coat.
  8. Return the baking sheet to the oven and bake for another 10-15 minutes, or until the meatballs are cooked through and the vegetables are tender.
  9. Garnish with sesame seeds and sliced green onions, if desired.

Notes

  • You can substitute chicken or pork for the ground turkey.
  • Add other vegetables like carrots or snap peas.
  • For a spicier kick, add a pinch of red pepper flakes to the teriyaki sauce.
